A Three Pie Fourth of July



A little ambitious I know, but I had to try it. Can you really bake 3 pies at once in the same oven? The answer is yes! Though I still need to perfect the craft, due to some over juicy fillings and therefore watery crusts, it is possible to use the same oven to bake 3 fruit pies. The trick was to find 3 pies with the same baking temperatures, bake times, etc. So, bing cherry pie, strawberry rhubarb pie, and cherry berry pie were our winners for this 4th of july!

For the bing cherry pie, I cut the sugar down to 3/4 cup, used cornstarch to thicken the filling, adding lemon juice to add tartness. Though the crowd was happy with the cherry pie, next year, I'll use regular cherries. Bing was just too sweet. 

For the strawberry rhubarb pie, I used 1 cup sugar, and 1/4 cup of cornstarch. It could use less sugar and more cornstarch next time. This was our watery wonder. Everyone raved about the strawberry rhubarb, but its crust was complete mush by dessert time. 

The last pie was cherry berry, also known as "Carrie Berry Pie". This had 2 cups of bing cherries, 2 cups of strawberries, and 1 cup of blueberries. An excellent combination. I will do this one again.
